Bacon does make everything taste good! This is a simple recipe and can be used in your pseudo B.L.T (bacon lettuce tomato) sandwich. In the past, I have used the bacon with a Tilapia filet ( or basically any white fish fillet) and seasoned appropriately.
I wanted something that works well for lunch and also as a complement to sweet potato for my little one. This combination is not unique, I doubt anything is, really.
Ingredients:
Chicken Fillet
Bacon Strip
Fresh Lemon (juiced)
Oxo Chicken Bouillon
What you’ll need:
Handheld citrus juicer
Pyrex dish
Microplane zester
Baking pan
Parchment Paper
What I did: I laid the chicken fillet in a rectangular pyrex dish, squeezed lemon juice onto the chicken and added lemon zest using the microplaner. I seasoned with oxo chicken bouillon (or your choice of chicken bouillon). I let the chicken marinade for a short spell in the fridge before baking. The oven was preheated to 350F , I lined my pan with parchment paper. Before laying each chicken on the pan, I wrapped each one individually with bacon strips. Previously, I had pan-seared the bacon wrapped chicken before transferring to the oven, but today, I put directly in the oven.
Taste: Simple but juicy with all the elements coming across. Definitely not ‘lemony’ chicken. Notice the small lemon specks on the chicken.
