This is tortilla with elements of Nigeria in the fillings. It was a nice weekday dinner.
- Honey beans (AKA cow peas or Nigerian beans); cooked
- Minced beef; browned
- Spring onions; diced
- Red Beets ; oven baked
- Gold Beets; oven baked
- Purple top radish; oven baked
- Bell Peppers
- Habaneros; diced
- Multi color variety small tomatoes; chopped
- Flour Tortilla
- Garlic, Fresh Sage herbs, and Oxo bouillon for seasoning
- Salt to taste
- Extra virgin olive oil
What you’ll need:
- Baking pan
- Aluminium foil
- Small fry pan/griddle/ microwave
- Small sauce pan/pot
What I did:
The mince meat was browned with the fresh diced sage, spring onions and garlic with some chopped yellow bell pepper added to it. While the chopped root vegetables were drizzled with olive oil and baked in the oven @ 350 F. My pre-boiled honey beans were on the side waiting. The tortilla was heated on a hot saute pan for a few seconds on both sides ( or just microwave), then the browned minced meat was added to it, followed by all the other ingredients; habaneros, beets, radish. For this wrap, the beef took a backstage- only a small amount was added to each tortilla.
Delicious, refreshing. It would great without the beef as well. The sweetness of the beets and beans with the beef was great, and the lingering heat from the habaneros made it a home run 🙂
