Am back! Spent most of my July across the pond, and the first week of this month recovering from Jetlag. That said, I have two simple onion based recipes to share, this one being the first ( sadly no photo for the second).
Ingredients
- Red potatoes (peeled)
- Crispy bacon
- Scallions/Spring Onion (diced)
- Red onion ( diced)
- Creme Fraiche
- Whole Grain Dijon Mustard
- Rainbow peppercorn
- Salt to taste
What you’ll need
- Potato peeler
- Colander
- Chopping board
- Saute pot
- Vegetable dicer/cube gadget
What I did
The peeled potatoes were cooked in boiling salted water until tender but firm in texture, and set aside in a bowl to cool down. Bacon was previously baked until crispy in the oven and chopped to small pieces. The onions were chopped and added to the cubed potatoes. In a bowl, I combined my creme fraiche (~6 oz or more) with a ~1 tbs Dijon mustard , some peppercorn and salt to taste. To the cooled potatoes with onions and bacon added, the creamy dressing was added and used to toss the salad.
Taste:
It was not too oniony, but you may replace it with your choice of vegetable, I like the tangy element . The salad was light and not cream heavy, which I attribute to the creme fraiche. The salad was a great combination with my baked Dijon mustard salmon steak. umm delicious
