Autumn is here, dusting off the jumpers/ cardigans etc. My mother loves Bisque so this was made as a treat for her.
Ingredients
- Butternut Squash (baked, see spaghetti squash
- Cauliflower
- Turkey Bacon (6 strips, baked)
- Purple Russian Tomatoes (6 small ones) (homegrown)
- Heavy Cream (1 cup)
- Garlic Powder
- Seasoning- all purpose spice
- Pinch of Salt
What I did:
I baked the squash in the preheated oven (350 F) for a few minutes after which I scooped the flesh out of half of it and put inside the blender added cauliflower, bacon and tomatoes. The puree was poured into sauce pan then heavy cream , garlic powder, and seasoning were added. The bisque was cooked on low heat until ready.
Taste
It was delicious with a hint of bacon, smooth and creamy. The bisque was served alone, while my friends added it to their fish- salmon.

I love soup. So thank you for this. I have already bought myself an acorn squash; so I am going to try your recipe with it. I will however use lobster instead of bacon.
