Summer Salmon

After a rather long hiatus from blogging, I am happy to be back online.

A simple and quick Salmon for dinner-  enjoyed by all 🙂

 

Ingredients

Atlantic Salmon

    • Crushed Red Chilli Pepper
    • Bay Leaf
    • Garlic Powder
    • Rainbow Peppercorn
    • All purpose seasoning
    • Dash of OIive Oil

 

Vegetable Stir Fry

  • Chickpeas
  • Raddish
  • Baby White Turnip
  • Scallions ( Spring Onions)- for stir fry and garnishing
  • Brussel Sprouts
  • Poblano Pepper
  • Vegetable Bouillon
  • Kosher Salt to taste
  • Olive Oil

What you’ll need

  • Small basting brush
  • Oven tray
  • Rectangular Pyrex dish
  • Parchment paper or Aluminium Foil
  • Saute pan
  • Small sauce pan
  • Chopping board

What I did:

Marinade the salmon with the spice mix and let sit for about 30 minutes, then it was baked in the preheated oven (350 F) until cooked to desired taste. Once done, salmon was allowed to rest outside of the oven for a few minutes before serving.

The chickpeas was boiled and set aside, while the vegetable were all chopped up. Once ready, the vegetable and chickpeas were stirred fried in a big saute pan with olive oil and seasoned to taste.

The fish was moist and light complemented by the seasonal vegetables stir fry .
