White Bass Fish

This is a quick snack that I was hankering for on a Sunday night. Very simple indeed and delicious.


White Stripped Bass (cleaned)

Roasted Hazelnut (whole nut blended to paste form)

Red pepper flakes

Kosher salt

Ginger (grated)

Garlic (pressed)

Olive oil (1/2 tsp)

What you’ll need

Baking pan

Griddle pan

Oil Spritzer

Aluminium foil / Parchment paper / Cling film

Spice mortar

Garlic press


What I did:

We bought some roasted hazelnuts and blended it to paste form, to the paste I added the pepper flakes, ginger, and garlic and salt to taste. The cleaned bass was coated with the buttery nut paste, covered with cling film and put in the fridge to marinade until ready.  At dinner time, I baked the fish in the preheated oven (350 F) and finished it off on a heated oiled griddle pan.


The fish was delicious!! Stripped bass worked really well with the nut paste, if I do say so myself. For this quick fish, I ate it with Nigerian Garri soaked in water with ice cubes, sugar and some almond milk.

As a snack or light meal, garri can be soaked in cold water (in which case it settles to the bottom), mixed with sugar and sometimes roasted peanut, with evaporated milk sometimes added. The amount of water needed for soaked garri is 3:1. Garri can also be eaten dry without water, but with sugar and roasted peanut added. Excerpt from Wikipedia.
