Rainy weekend here (much-needed), I typically think of soups for weekend staycation but in the end I wanted something easy with ingredients on hand. A family friend came down with a bug so our planned fun, cooking hangout got cancelled 🙁
In this dish, the Okra sauce is the star even though it is served as a side dip. The sauce can also be served with rice, I believe.
- Tilapia fillet (rainbow pepper, sea salt and thyme; olive oil)
- Okra Sauce
- 1 Orange bell pepper
- 1/2 Red onion
- 1 cup dried fish (rehydrated, deboned)
- ~ 1/2 cup water
- All purpose seasoning
- Sea salt to taste
- Homemade machine basic bread
What you’ll need:
- Chopping board
- Frying pan/ skillet
What I did:
Sauce: All the vegetables were chopped and blended with water added. Once blended, the sauce was cooked on low heat for about 30 minutes with seasoning added. Meanwhile, the seasoned Tilapia fillet was lightly fried in olive oil on the stovetop. The bread was made using my bread machine earlier in the day, so it came in handy for this light lunch.
If you have ever eaten okra and fish combo, you will appreciate this sauce. That said, it was very delicious – the pepper and garlic propelled the sauce to a standalone to be served whichever way you want, and best part no added oils.
