Eggplant Chard Stir-Fry

As usual, some of my dishes comes from trying to use up leftover ingredients and  be creative in presentation for the family to want to ingest. This was going to be vegetarian and I was a little concerned that I might miss the mark with it but as it turns out, I did not, hence the post.


  • Eggplant (from garden)
  • Swiss Chard
  • Radish
  • French Bean
  • Red Onion
  • Fettuccine (spinach and egg nest pasta)
  • Olive Oil
  • All purpose seasoning, and
  • Red crushed pepper flakes

What you’ll need

  • Sauce pan
  • Wok or Saute pan
  • Chopping board

What I did

The nest fettuccine was cooked to desired texture in salted boiling hot water, drained and set aside. Chopped red onions were sauteed in olive oil and then the french bean, radish, eggplant were added to the pan. The chard and seasoning were added last. To vegetable stir-fry the pasta was added and seasoned as needed.


The stir fry was delicious adding chard to it turned out to be a very good idea! It was not too chewy, as long as it is not over cooked. My hubby went for seconds… definitely a repeat recipe in the very near future.
