Couscous Lentil Salad

This salad is easy to make and light.


  • Mediterranean couscous
  • Butter
  • Green lentil
  • Chicken Stock
  • Red bell pepper
  • Green bell pepper
  • Spring onions
  • Red onions
  • Sea salt to taste
  • Rainbow peppercorn
  • Black pepper
  • Tarragon
  • Extra virgin olive oil, drizzle

What you’ll need:

  • Chopping board
  • Salad Bowl
  • Saute pot

What I did:

Bring to boil water, butter, and salt in a pot,  remove from heat and add the couscous. In another small saute pot, boil the lentil in your choice of either water or stock.  Set aside to cool like the couscous. Chop up all vegetables into a salad bowl then add the cooled couscous and lentils, mix up all the ingredients. To the salad ingredients, add the seasonings and drizzle with extra virgin olive oil, mix them up all and put in the fridge to chill. Enjoy cold!
