If you love pumpkin like my husband, this is your desert! Beware- it does not have a crunchy texture .. That said, it is a soft mash delight!
- Acorn Squash ( microwaved, cut into chunks)
- Fresh Figs (blended)
- Pumpkin Puree
- Yellow Peach (sliced)
- Brown sugar
- Yellow custard
- Ice cream
What you’ll need
- A glass Pyrex
- Chopping board
- Mixing bowl
- Baking pan
- Magic bullet blender or any handy one
What I did
The squash was cut in half and microwaved for a few minutes to soften after the seeds were removed from the center. the softened squash was cut out of the skin in chunks. In a separate bowl, the pumpkin puree was mixed with blended fresh figs, some sugar and cinnamon.
The layering was the squash first, then the pumpkin mixture and finally the peach slices. The mixture was then baked in a preheated at 350 F oven.
This was served with a side of custard and ice cream.
