Shiitake -Pine nut Macaroni Stir Fry

This was surprisingly complex and had us asking for more after eating the first serving. It was as in most cases, a rummage through the refrigerator for things to combine for a quick weeknight dinner 🙂


  • Macaroni Pasta
  • Shiitake mushrooms (diced)
  • Pine nuts
  • Red onions (diced)
  • Creme Fraiche
  • Olive Oil
  • All purpose seasoning
  • Maggi bouillon cube
  • Peppercorn Pepper
  • Salt to taste


What you’ll need

  • Chopping board
  • Saute pan
  • Boiling pan

What I did

The  macaroni pasta was cooked in salted boiling water until al dente and set aside. The pine nuts were quickly sauteed in heated oil prior to adding the onions and mushrooms, and seasoned. The cooked pasta was then added and mixed with the ingredients in the pan, after which about ~8 oz of creme fraiche was added to lightly coat the stir fry. Tossed for a  minute or so and served!
