A Nigerian staple that is a favorite of mine is Cassava Yam but it can be expensive here. We typically serve it with eggs, or some type of sauce/stew. Here it is with both egg and sauce. Delicious I must say, another way to enjoy yam 🙂 🙂
- Cassava Yam (Chopped, boiled)
- Green Lentil (boiled)
- Corned Beef Stew (Corned beef; blended bell pepper, onions, habanero; Olive Oil) * Any sauce you prefer*
- Olive Oil

- Egg Frying Ring
- Frying pan
- Boiling Pot
- Chopping Board
- Shape cutter
What I Did
The corned beef sauce was made first, essentially blended peppers and onions together and pour into hot oil to fry, added corned beef and seasoned to taste [feel free to use any sauce of choice, I prefer this with yam] . Then the lentil was boiled and set aside. I cooked the yam in salty water with some sugar (a weakness of mine), and drained out the water once the yam was done. The egg was fried inside the ring fryer to get the shape seen in photo below.
